Fishing and fish fillet knives are specialized for boning and have slim, flexible blades made of corrosion-resistant stainless steel. Blade lengths vary between 3 and 11 inches, and handles are typically wood, although modern versions have polymer, acrylic and rubber handles. Many models include a sheath made of the same material as the handle or leather.

Fillet knives have thin, flexible blades and sharp tips, perfect for portioning neatly. They quickly separate the soft flesh from the bones, scale and remove fins and organs. Their blades are flexible, and the three main sections are a sharp piercing tip for cutting along the dorsal fin, a curved belly for slicing and a solid base to break bone. A shorter blade is better for smaller or slimmer fish than longer, bigger knives for large species.
