Our Jerky formulations emphasize slightly higher levels of sugars, or humectants, to help retain moisture longer; which makes for softer, more pliable chewing jerky. Each kit contains one cure packet with only sodium nitrite on a small salt carrier so that you can choose to omit the cure without compromising the overall seasoning of your jerky.
